Champagne is a Sparkling Wine, but it must come from the Champagne region of France, to be called Champagne. The bubbles are formed during a second fermentation process, sealing in the carbon dioxide that is formed when yeast converts sugar into alcohol, making millions of bubbles with no place to go. Food Pairing Mild and strong cheeses, spicy Asian dishes, seafood, pizza and Mexican food, chips, nuts and popcorn, all pair surprisingly well due to the saltty nature.
